Okay okay, one more salad recipe, but only because this one is a new discovery and so, so yum. Although I generally shy away from grains in my salad (too many delicious fruits and veggies out there), I was in a pinch yesterday and needed an extra ingredient to bolster up my itty bitty apple and greens salad, so I grabbed a container of leftover quinoa chilling in my fridge and layered it in. Try it, you’ll like it.
Quinoa Apple Salad with Spinach and Arugula
About 1/2 cup of quinoa
Big handful of spinach/arugula salad mix, roughly chopped
1/2 apple, chopped
1 teaspoon chia seeds (optional)
1 teaspoon sunflower seeds (optional)
1 Tablespoon olive oil
1 teaspoon lemon juice
1 teaspoon Dijon mustard
Salt and pepper
Whisk together the olive oil, lemon juice and mustard in a small bowl to create a dressing. Season with salt and pepper to taste and set aside.
Spread quinoa on a plate (or tupperware if packing for lunch like me) and drizzle with about half of the dressing*. Add the salad mix and drizzle with the remaining dressing. Top with chopped apples and a sprinkling of chia and sunflower seeds (optional).
*Note: Because this is a grainy salad, it stands up well to being dressed in advance (e.g. before you leave for work).
