Happy Memorial Day weekend! This is such an easy, healthy treat to whip up over the long weekend. I’ve always loved the dried mango you can buy in bulk at Costco, but it’s so sugary, I feel like I’m eating candy. Drying your own mango ensures it is pure fruit, no added sugar, and it’s still delicious. Just make sure you have the time to check it every half an hour for 2 – 3 hours.

INGREDIENTS

PREPARATION

Set your oven to its lowest temperature. Line a baking sheet with a silicon mat or wax paper.

Cut up your mangos into even slices, about 1/4 – 1/2 of an inch thick. (Too thin and your mango will glue itself to the wax paper. I learned this the hard way. There were a few casualties. I don’t want to talk about it.) Try to make your slices even so they dry at the same rate.

Place your mango slices in one layer over your lined baking sheet. Dry in the oven for 2 – 3 hours, flipping every half hour or so, until desired texture.

Try not to eat them all in one go. Save some for your friends. They’re yummy, so this will be hard. In fact, don’t even try. Just eat them. Two mangos is, like, nothing. It’s fruit, it’s healthy. Wow, I’m tired. Yay for the three day weekend!
