double stuffed brownies

This is what happens when moving day and PMS fall on the same weekend: Ghirardelli double chocolate brownies stuffed with Double Stuf Oreos.

After two straight days of packing, unpacking and organizing all of my worldly possessions, the last thing I wanted to do on Sunday afternoon was grocery shop. So when I finally forced myself to drive over to my new neighborhood Albertson’s, instead of stocking up on healthy produce and fresh cuts of salmon like a good girl, I left with a carton of eggs, a package of Double Stuf Oreos and a box of super chocolately brownie mix. Brownies for dinner? Sure! Why not? And why don’t we stuff them with Oreos while we’re at it?

Needless to say, the results were pretty remarkable. This recipe is a definite crowd pleaser, especially if you surround yourself with chocolate freaks like me.

makes 16 brownies


1 box store-bought brownie mix, prepared (or a batch of your favorite homemade brownie batter)
1 package Double Stuf Oreos (16 for the brownies, the rest for snacking)


Preheat oven to 325 degrees F. Lightly grease an 8×8″ baking pan with butter or spray with cooking spray.

Mix up your brownie batter in a large mixing bowl. Pour half of the batter into the greased baking pan. Place your Double Stuf Oreos side by side on top of the batter (as pictured above) and pour the rest of the batter over the Oreos. Bake in the preheated oven for 20 minutes or until desired degree of doneness. I like my brownies soft and gooey, but if that’s not your thing, refrigerate brownies for half an hour or so. Let cool completely before slicing into 16 even squares.
